Cupcakes.

I love being here, but, I can't wait to go home so that I can have the 'luxuries' that i'm used to. Like baking sheets, measuring cups, forks, a broom, baking powder, knowing where things are in the store and what they're called.

I decided to make cupcakes. I thought about making them from scratch but then realized the only thing I own that goes into cupcakes are sugar, milk and eggs. I don't own anything else, nor will I go through a container of baking powder in the next month. So I bought a Betty Crocker mix. I got home and realized, shoot, we don't have muffin tins, or a cake tray. One of the other IES apartments had a muffin tin. Done. So last night I decide to bake these muffins since I don't have class in the morning. But I didn't have cake liners. So.. I make a 9pm trip to Tesco. They don't carry cake liners. So I go downstairs to Mark & Spencers and alas! Success! So I go back up to Tesco to find ingredients for icing. I cannot find confectioners sugar anywhere! You know why? Because it's called 'icing sugar' and is with the baking chocolate. I was really frustrated by the time I found it and decided to go with pre-made icing. I like the easy way out. Deal with it.
I get home, and realize we don't have any bowls bigger than cereal size. So I make the mix in a saucepan. Remember how I said we don't have measuring cups? Well we have a teaspoon and 1/2 tablespoon, so I measured everything out with a half tablespoon, converting ML to cups. It was pretty sad. 32 spoonfuls of water plus 2 teaspoons and then however much oil. At least the eggs were easy to measure. Then I went to put them in the oven, I have no idea what all the symbols mean on our stove. I picked one that looked like it might mean 'bake' and went for it. They cooked. It was fine. Having only one muffin tin it took a while to get all three batches done. Good thing I had all night, and a paper to write. I iced the cupcakes today, Monica is a master cakebaker and had her mom ship all her tips and colorings, so I didnt have to buy those at least.

Also, we only have 4 forks in our apartment. I'm not sure how they expected 4 people to live here. We have maybe 5 bowls, and 7 plates. The other apartments are well stocked. We have to run the dishwasher every week or we have zero eating supplies. There's only two of us. We have no broom and a vacuum cleaner that doesn't work. But we do have about 20 knifes, so thats helpful, for.. cutting all our pasta.. and rice..IES did say we could go buy 4 new forks! Whoopie! It's really not that big of a deal. It just makes things more difficult.

Are those the cupcakes that you made in the picture? I feel like you just stole that picture from some website because they are way cute. Especially coming from the girl who refuses to cook from scratch. Also, do you love the Tesco there because I am in love with Fresh and Easy. Obsessed.

I did make those. And I really wanted to bake from scratch, but didn't want to pay for all the ingredients. And Tesco is ok, they're open 24 hours, which is brilliant.

when the apartment kids here go to each others apartments for dinner they have to bring their own plates and utensils. lol

way to not be cheap IES.
